Tiramisu - Snezana Kitanović

Tiramisu.

  • 8 egg yolks
  • 1/2 kg. sugar
  • 1 bag of gelatin (10 gr.)
  • 500 gr. Swabian cheese
  • 750 gr. sweet cream
  • no coffee
  • 1-2 glasses of red wine
  • 2 large boxes of biscuits
  • like dust
  • rum
  1. Beat egg yolks and sugar with a mixer and steam.
  2. To dissolve the sugar, gradually add 1 glass of red wine until the mixture thickens and the sugar dissolves.
  3. When it's ready, remove it from the heat and immediately melt the gelatin with 4 tablespoons of cold water, then add it to the hot filling and combine. Leave to cool well.
  4. Mix the Swabian cheese with the cooled filling.
  5. Whip the sweet cream and combine with the previous mass (mix with a mixer, but not at the highest speed).
  6. Brew a cup of coffee without coffee and when it cools down (it should not be lukewarm), add rum and sweeten it with a little sugar.
  7. Dip the biscuits and arrange them in a slightly deeper dish (width 23cm, length 31cm, depth 10cm.).
  8. Arrange a row of horizontally placed cookies, then the filling, then some cocoa powder, then a row of vertically placed cookies, then the filling and cocoa powder over it.
