The basis for princess donuts are puffs made of cooked dough, filled with different fillings or topped with some fine sauce, while they are sprinkled with fine powdered sugar on top. The dough for princess donuts has a fairly neutral taste, so sometimes they are made in a salty version with, for example, Russian salad instead of sweet filling. In our country, the most common are sweet varieties with vanilla cream, whipped cream or ice cream, with chocolate topping, oblong ones with cream - eclairs, popellini.

The word profiterole was first used in a recipe from 1604 for potage with profiterole in which donuts are cooked in almond broth and then served with coconut, truffles and the like. The first dough for donuts was made by Catherine de' Medici's chef in 1540, when he went to the castle of the Duke of Orleans (who would later become King Henry II of France) as part of the wedding entourage of the mistress of Tuscany. Profiteroles were created from this dough in the 19th century.
