Plum cake - Zuzana Grnja

  • 500 g of plums (fresh or from a jar)
  • 100 g of dark chocolate
  • 50 g of cornflakes
  • 3 bags of gelatin
  • 4 spoons of honey
  • 2 dl of orange juice
  • 250 g of cream cheese
  • 100 gr of miller
  • a sprig of rosemary
  1. Break the chocolate and melt it in steam. Add the crushed cornflakes and knead until it is combined with the chocolate.
  2. Round mold with a diameter of 26 cm. cover with parchment paper and pour chocolate cornflakes. Pat with your fingers, flatten and leave to cool.
  3. Then transfer the cooled base to a serving tray. Prepare the gelatin according to the instructions on the packet.
  4. Cut the plums in half, remove the pits and cook at a moderate temperature with juice, honey and rosemary.
  5. When the plums are soft, remove from the heat, remove the rosemary and add the gelatin.
  6. Beat well with a mixer and set aside.
  7. Separately beat the cream cheese with milleram and mix with 2/3 of the plum puree.
  8. Fill the cake in the following order: crust, plum cream, remaining fruit puree and flatten.
  9. Place the cake in the refrigerator to cool and harden. Decorate as desired.
