Plum cake - Zuzana Grnja
- 500 g of plums (fresh or from a jar)
- 100 g of dark chocolate
- 50 g of cornflakes
- 3 bags of gelatin
- 4 spoons of honey
- 2 dl of orange juice
- 250 g of cream cheese
- 100 gr of miller
- a sprig of rosemary
- Break the chocolate and melt it in steam. Add the crushed cornflakes and knead until it is combined with the chocolate.
- Round mold with a diameter of 26 cm. cover with parchment paper and pour chocolate cornflakes. Pat with your fingers, flatten and leave to cool.
- Then transfer the cooled base to a serving tray. Prepare the gelatin according to the instructions on the packet.
- Cut the plums in half, remove the pits and cook at a moderate temperature with juice, honey and rosemary.
- When the plums are soft, remove from the heat, remove the rosemary and add the gelatin.
- Beat well with a mixer and set aside.
- Separately beat the cream cheese with milleram and mix with 2/3 of the plum puree.
- Fill the cake in the following order: crust, plum cream, remaining fruit puree and flatten.
- Place the cake in the refrigerator to cool and harden. Decorate as desired.
