Russian salad cake - Kristina Gašpar - Recipes and Cookbook online

Russian salad cake was popular decades ago. Now it is almost forgotten. Some other cakes are modern. We all have more or less the same recipes, but I decided to adjust the traditional recipe a bit.

Russian salad cake, crust ingredients:

  • 10 egg whites
  • 10 spoon of sugar
  • 2 egg yolks
  • 10 spoons of ground walnuts
  • 6 tablespoons flour (not full)

Ingredients for the filling:

  • 1 liter of milk
  • 8 egg yolks
  • 200 g of sugar
  • 6 spoons of sharp flour
  • 1 spoon of vanilla sugar
  • 250 g of margarine/butter
  • 2 spoons of powdered sugar
  • 150 g of raisins
  • 150 g of chopped walnuts
  • 150 g chopped jelly candies
  • 2 dl sweet sour cream

Russian salad cake, preparation:

  • From this amount, make three crusts with frame dimensions of 20*30 or a diameter of approx. 25 cm.
  • Beat the egg whites until foamy, add the sugar, beat until it dissolves, then add the egg yolks and beat. Stir in the walnuts and the flour you previously sifted.
  • Bake the crusts at 150-170 degrees for 10-15 minutes.
  • For the filling, bring 7 dl of milk to a boil.
  • Beat egg yolks with sugar, add flour and 3 dl of milk.
  • Whisk all the ingredients together.
  • When the milk boils, cook the filling while stirring continuously - cook for a few minutes until the filling thickens.
  • Stir in the vanilla sugar.
  • When the filling has cooled, combine it with the butter that you whipped with powdered sugar.
  • Then stir in the whipped cream.
  • Separate a third of the filling, and add raisins, nuts and jelly candies to two thirds.
  • Fill the cake as follows: crust, filling, crust, filling, crust and finish with yellow filling.

If you like sweeter cakes, put more sugar in the filling.
