Vareniki - Verica Poznanović - Recipes and Cookbook online

Vareniki are a type of stuffed dumplings. They are, in fact, unleavened dough balls in the shape of squares or crescents, filled with mashed potatoes, sauerkraut, cheese, cabbage, meat, hard-boiled eggs, or a combination thereof. They can also be filled with fruit. Vareniki are very popular in Ukraine and Russia.

The dish is prepared by wrapping the filling with dough and cooking it for a few minutes, then pouring butter or oil over it. The name vareniki simply means "cooked thing" from the adjective varenyy.

THE POOR'S DISH THAT CONQUERED THE WORLD. Famous vareniki on your table

Vareniki, ingredients:

  • 3 cups flour
  • 1 cup of water
  • 1/2 teaspoon salt
  • 2-3 tablespoons of sunflower oil
  • 500 g of frozen pitted cherries
  • 200 g of sugar
  • 2-3 teaspoons of wheat flour
  • oil if needed

Vareniki preparation:

  • Thaw the cherries and set the juice aside. Add sugar and wheat flour to the cherries. Set aside.
  • Mix the flour with lukewarm water, salt and sunflower oil and knead the dough.
  • Transfer the dough to a bowl, cover with a cloth and let it rest for 1 hour.
  • Roll out the dough to a thickness of about 2 mm and cut it into small circles.
  • Place the filling in the center of each circle, fold the dough over the filling and pinch the edges to seal.
  • Let the water boil, put the dumplings in it. Boil them until they rise to the surface of the water.
  • Serve vareniki on a plate, with butter, cream and sugar.
