These sarmica are a famous specialty from Stara planina, and they are consumed with sour milk from the pastures of this beautiful mountain.
Sarmice in linden leaf, ingredients:
- two young linden leaves per wreath
- 1/2 kg of onion
- 300 g of leeks
- 1 cup of rice
- landing
- dry herbal spice
- allspice
Sarmice in linden leaf, preparation:
- Tear off the stalks with a young linden leaf, scald it with hot water, and take it out to drain.
- Saute onion and leek in oil, then add rice, salt and allspice and fry a little more.
- Assemble two leaves together, since they are small, and turn the reverse side of the leaf so that the filling is placed on them with a spoon, then fold the edges.
- Put the sarmice in a pot, pour water (about two fingers above the sarmice), cook for about 45 minutes, then make a spray of oil and allspice, pour over the crackers and put in the oven to brown.
- They are ready when all the water evaporates and the slices remain in the oil.
Tip: sarmica can be fatty, in which case minced meat is added and cooked in fat.
