Today we have prepared a baked recipe for you green beans, which in the past was called: green beans on a baking sheet. Green beans are one of the most important ingredients of Mediterranean and Balkan cuisine and are prepared very often. In Greece, this dish is called FasolakiaThe secret to preparing this recipe is slow simmering and baking in the oven. In Greece, crumbled feta cheese is added as a side dish to ready-made green beans, and in the Italian version, crumbled ricotta cheese.

This dish is mostly prepared in the summer months when green beans are abundant and when they are at their peak of ripeness with tomatoes. However, since you can also buy frozen green beans in any well-stocked store, this will help you enjoy this dish at other times of the year, when fresh green beans are not available.

This recipe is lean, although it can also be greasy, if you use lard to prepare it.

Baked green beans - green beans on a baking sheet, ingredients:

  • green beans, so called "pencil", 1,2 kg
  • olive oil, quality, 150 gr
  • red onion, 2 heads
  • garlic, 4 cloves
  • tomatoes, 3 pieces of medium size
  • Mediterranean celery, 1 branch
  • leek, 1 piece, white part, medium size
  • red pepper, 1 piece, medium size
  • corn flour, integral, 50 gr
  • pureed tomatoes, 500 ml
  • salt, 2 teaspoons
  • pepper, 2 pinches
  • oregano, 1 pinch
  • ground paprika, 1 tsp
  • dry herbal spice, 1 teaspoon
  • fresh dill, 1 sprig
  • old white cheese, 100 gr

Baked green beans - green beans on a baking sheet, preparation:

  • Wash green beans well. Remove the ends.
  • In a large pot, heat the olive oil. Add the chopped red onion and fry on a low temperature for a few minutes.
  • Chop all the vegetables and add them to the pot to simmer for about 10 minutes.
  • Chop one tomato.
  • Add green beans and chopped tomatoes, and simmer for 15-20 minutes. Season with salt, pepper, oregano, paprika, dry herbs (to taste).
  • Transfer the green beans to a pan (diameter 36 cm, depth 6 cm).
  • Dust the green beans with the wholemeal cornmeal.
  • Drizzle with a little olive oil.
  • Chop the dill and spread over the green beans.
  • Bake in a heated oven for 45-50 minutes at 200 C. 
  • Serve with a piece of black bread, and crumble old white cheese over the green beans (you can also use feta cheese, ricotta, cheese, etc.).
