THE BEST GIBANICA COMPETITION OF SERBIA - harmonica gibanica - Milica Živković.

Harmonica gibanica, ingredients:

  • 400 g of bark for gibanica,
  • 300 g of cheese (feta, small cheese)

It is necessary for the dressing:

  • 2 eggs,
  • 4 tablespoons of sour cream or thick yogurt,
  • 1 dl of oil,
  • 2 dl milk,
  • 2 dl of sour water,
  • 1 teaspoon of baking powder and
  • 1 teaspoon of salt, if the cheese is not salty.

Harmonica gibanica, preparation:

  • Spread the crust and sprinkle a little cheese all over the crust, stack like an accordion and place in a baking tray.
  • Do the same with all the other crusts.
  • The amount depends on the size of the tray.
  • Beat eggs with cream, add oil, salt, milk, sour water and baking powder.
  • Pour over the crusts and leave to soak until the oven heats up to 200 degrees.
  • Bake for 20 minutes and leave another 10 minutes in the oven.
  • Remove from the oven, cover with a cloth, cool a little and cut into pieces and serve with yogurt and sour milk.
