French onion soup as a quick lunch

French onion soup is traditional French recipe, which was most often prepared in cold winter days.

This soup, although clear, with the addition of dry bread and Gruyère cheese, is a warm and highly nutritious starter, or main meal. Who hasn't heard of Onion Soup? Only the one who hasn't seen the series "Hello, Hello"... 

The special feature of this traditional prescription for preparing French onion soup make up its ingredients: Cévennes onions, Gruyère cheese and dried bread.

Cévennes onions thrive in the southern part of central France and are characterized by a medium-sweet taste.

Gruyère cheese is an old hard yellow cheese, named after the town of Gruyères in Switzerland, which is made from cow's milk.

Dried bread, which is used for this recipe, is obtained in a special way, by drying at very low temperatures, close to the freezing point.

French onion soup, ingredients:

  • onion, Cévennes, 10 small heads
  • water, 1 liter
  • olive oil, 2 tablespoons
  • cheese, old yellow, Gruyère, 125 gr
  • so
  • beaver
  • red pepper, in grain

French onion soup, preparation:

  • Clean the onion and cut it into cubes. Heat a pan, add 2 tablespoons of olive oil and add the onion. Fry until the onion turns golden yellow.
  • At the same time, prepare a pot for cooking soup, pour 1 liter of water and add a pinch of salt.
  • When the onion acquires a strong golden color, pour the contents of the pan into a pot of heated water, and let it cook for 20-30 minutes on medium heat. Add pepper and red peppercorns, as desired and to taste.
  • Take 4 bowls for serving the soup, put slices of dried bread on the bottom. Grate old yellow Gruyère cheese on the bread. Instead of grating, you can also put thin slices.
  • Pour the soup into bowls. Leave the bowls covered for a few minutes. Serve warm.

Preparation time: about 35-40 minutes

Usually, French onion soup is served in deep bowls that retain the heat of the soup for a long time.

Note: since it is difficult to find original ingredients in these parts, try to find ingredients (onion and cheese) with similar characteristics and the result is sure to be excellent.
