COMPETITION FOR THE BEST GIBANICA OF SERBIA – gibanica with spinach.

Preparation: 10 minutes
Baking: 20 minutes
For 8 people

Gibanica with spinach, ingredients:

  • 500 g pie crust
  • 1 box of baby spinach
  • coarse sea salt to taste
  • 400 g of hard cheese
  • 1,5 dl of olive oil
  • 1-1,5 dl of water

Gibanica with spinach, preparation:

  • Salt the spinach and mash it with your hands until it softens.
  • Crumble the cheese, mix with the spinach and add 1 tablespoon of oil.
  • Grease a small pan with oil and place 2 crusts crosswise so that the ends are over the edge. Arrange 4 crusts on top and spray each one with oil and water.
  • Spread half the filling and stack the crusts again, the crusts must accumulate a little and sprinkle each one with oil and water. Another part of the filling and the rest of the crust.
  • Fold the crusts that are sticking out and another crust over it, with which to tuck everything in.
  • Brush with oil and water and bake at 200°C until golden brown, about 20 minutes.
  • Serve when cool.
