Best Banana Bread Ingredients:

  • 1 whole and 3/4 cup all-purpose flour
  • 1 whole and 1/2 cup sugar
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 2 medium ripe bananas, mashed (1 cup)
  • 1/2 cup canola oil (if you don't have it, use sunflower)
  • 1/4 cup plus 1 tablespoon whey
  • 1 teaspoon of vanilla extract
  • 1 cup chopped walnuts, optional

The best banana bread, preparation:

  • Heat the oven to 180°C.
  • In a large bowl, mix flour, sugar, baking soda and salt.
  • In another bowl, mix eggs, bananas, oil, whey and vanilla
  • Add to the flour mixture, mixing just until combined.
  • Add walnuts if desired.
  • Pour into a greased or parchment-lined 23 x 12 cm loaf pan.
  • Bake until a toothpick comes out clean, 75 to 90 minutes (after 40 minutes, constantly check whether it's ready-baked, so it doesn't burn).
  • Cool in the pan for 15 minutes before removing to a wire rack.
