Best Banana Bread Ingredients:
- 1 whole and 3/4 cup all-purpose flour
- 1 whole and 1/2 cup sugar
- 1 teaspoon of baking soda
- 1/2 teaspoon salt
- 2 large eggs, room temperature
- 2 medium ripe bananas, mashed (1 cup)
- 1/2 cup canola oil (if you don't have it, use sunflower)
- 1/4 cup plus 1 tablespoon whey
- 1 teaspoon of vanilla extract
- 1 cup chopped walnuts, optional
The best banana bread, preparation:
- Heat the oven to 180°C.
- In a large bowl, mix flour, sugar, baking soda and salt.
- In another bowl, mix eggs, bananas, oil, whey and vanilla
- Add to the flour mixture, mixing just until combined.
- Add walnuts if desired.
- Pour into a greased or parchment-lined 23 x 12 cm loaf pan.
- Bake until a toothpick comes out clean, 75 to 90 minutes (after 40 minutes, constantly check whether it's ready-baked, so it doesn't burn).
- Cool in the pan for 15 minutes before removing to a wire rack.
